One of my all-time favorite dinner breads of all time are biscuits, and they are even better with some cheese, garlic, and butter!
In the quest of finding a lower carb and healthier version of a biscuit (my family has turned to ketogenic diet for a variety of reasons), I have come across this recipe after trying dozens and it has quickly become a family favorite. Unlike most dinner breads, I can only eat one because they are so incredibly filling!
1/4 cup & 1 tbsp. almond flour
2 tbsp. coconut flour
1 tsp. baking powder
1/4 tsp. garlic powder
1/4 tsp. salt
1/4 cup grated Parmesan cheese
1/2 cup shredded sharp or extra sharp cheese
1/4 cup sour cream
2 tbsp. softened butter
1-2 tbsp. melted butter
chopped or dried parsley
Preheat the oven to 350 degrees. Mix all of the dry ingredients and cheeses in a bowl and then add sour cream, egg, and butter. Mix until combined. Line a baking sheet with parchment paper or silicone mat. Scoop out mixture into 6 mounds, making sure that there are about 3 inches between each.
Bake for 18-20 until top and bottom of biscuits are slightly brown. Drizzle melted butter on top of biscuits and sprinkle parsley over biscuits. Serve warm.
