I can't think of anything that satisfies me more than a warm bowl of creamy pasta. Of course, no recipe that I could get my hands on could be half as satisfying than this one, as a bonus - it's gluten-free (for those who need it to be), high in protein (super-filling!) and lower in carbohydrates. Unlike many low carb or gluten-free pasta sauces, this one is actually delicious!
I challenge anyone to find a more rich, creamy, and truly delicious Alfredo sauce than this!
|Pairs perfectly with cheddar garlic biscuits!|
1 cup whole milk*
1/2 cup cottage cheese
1 tbsp cornstarch*
1/4 tsp sea salt
1/8 tsp black pepper
1/4 tsp garlic powder
1/2 cup freshly grated Parmesan or Romano cheese**
1/8 - 1/4 tsp basil
* For a keto-friendly sauce, you can substitute whole milk for heavy whipping cream and omit the cornstarch.
** Please note that when using pre-shredded cheese, that the anti-caking agent may not be gluten-free!
Add all ingredients except basil into a food processor or blender and blend until smooth (no clumps!)
Pour sauce into a saucepan and cook over medium/low heat until warm. Add basil and turn heat to low and continue to cook for 10 minutes, being sure to stir occasionally.
To make this recipe a gluten-free meal, add to gluten-free noodles. You can also add it to cooked low carb noodles (a must for a keto-friendly recipe). It would be delicious with grilled chicken or cooked shrimp and paired with my cheddar garlic biscuit recipe!
