Brown Rice, Beef and Bell Pepper Ragout (plus Romaine and Shaved Carrot Salad with Parsley)
1⁄2 cup uncooked short grain brown rice
11⁄2 large red bell peppers, cut into 1-inch pieces 1⁄2 cup chopped tomato
1⁄4 cup chopped onion
2 tablespoons chopped celery
2 teaspoons chopped green onion
1 teaspoon chopped fresh flat-leaf parsley
1⁄2 teaspoon chopped fresh thyme
1⁄4 teaspoon salt
1⁄4 teaspoon pepper
6 oz ground sirloin
1 cup chicken broth
2 cups torn romaine lettuce
1 cup shaved peeled carrot
11⁄2 teaspoons olive oil
3⁄4 teaspoon red wine vinegar
3⁄4 teaspoon chopped fresh flat-leaf parsley 1⁄8 teaspoon salt
1⁄8 teaspoon pepper 1 garlic clove, minced
Cook rice according to package directions. Combine bell peppers, cooked rice, tomato, onion, celery, green onion, parsley, thyme, salt, pepper and sirloin in a 3- to 4-quart slow cooker. Add broth. Cover; cook on Low heat 6 hours.
Combine lettuce and carrot in a medium bowl. Combine oil, vinegar, parsley, salt, pepper and garlic in a small bowl. Stir with a whisk. Pour dressing mixture over lettuce mixture. Toss gently.
